Chimay: Grande Réserve Barrique 2022: a 100% Belgian edition!

Beginning March 14th, Chimay is offering its 2022 edition of the Grande Réserve for sale, fermented in barrels containing Belgian Gouden Carolus Single Malt Whiskey. This is the fruit of a cooperative Belgian effort between the Flemish and the Walloons, united through their passion for exceptional products. The secret: triple fermentation and a long process, lasting almost eight months! The “Grande Réserve Barrique” is a Chimay Bleu, fermented in barrels, but not just that: only after an initial traditional fermentation, a fermentation and maturation in barrels for several months – with sugar and fresh yeast added – followed by a final fermentation in the bottle for three weeks, can the Grande Réserve Barrique be sampled... only after an 8-month wait.

Every year since 2015, a new edition has been born.  This year the brewmasters traveled from Chimay to Mechelen to meet with the Leclef family, owners of Het Anker brewery for five generations and, since 2010, owners of De Molenberg distillery.  That is where Gouden Carolus Single Malt, an internationally renowned Belgian whiskey, is produced.

“It made sense for Chimay to ask Het Anker for tests.  We take important values into account, such as the traditional value of the products,” explained Ariane Dewulf, Chimay's Quality Control Manager.

For this 2022 edition of Chimay Grande Réserve Barrique, the masterbrewers refermented Chimay Bleu for six months in barrels of Gouden Carolus, in the heart of the cellars of Scourmont Abbey.
